This Delicious Thai curry is quick and easy to prepare and cook, and good for you too. Serve with rice or noodles of choice.
Thai Curry Ingredients
2 Servings
Preperation and cooking time about 20 minutes
1)Cooked chicken, thigh,leg or breast. Or prawns, beef, lamb, vegetarian.
2)A jar of Thai green or red curry paste ( green paste is more spicy and hot)
5)1 red,green or yellow pepper finely sliced
6)1/2 a head of broccoli sliced.
7) handful of washed and crushed fresh basil leaves to add at end of cooking
8)can of coconut milk ( light or coconut cream if prefered)
9) peanut oil or virgin coconut to fry onions etc.
Example of a red Thai curry for two using ready cooked chicken thighs.
Fry onions,pepper and broccoli in a large pan or wok, when soft add chopped garlic and stir fry for about 1 minute, don't burn garlic it makes it bitter.
Add a heaped tablespoon of red Thai curry paste ( the amount can be varied depending on how spicy and hot you like curry) Fry paste stiring for about 2 minutes. Add a 1/2 can of coconut milk to start with, more can be added later depending how thick you want your sauce. Stir sauce and add chopped chicken thigh pieces, simmer for about 10 minutes to heat chicken right through.
Stir in basil just before plating up.
10 minutes before end of cooking add rice or noodles to a large pan of lightly salted water, drain and serve with curry.
